In 1638, the first wave of colonisation — with the arrival of the Dutch, followed by other Europeans and their slaves brought from Africa, Madagascar, India, and Asia — planted the seeds of an extraordinary cultural melting pot. Over time, culinary exchanges and influences came together to weave the rich gastronomic tapestry that honours Mauritius to this day.
